RESEP AYAM GORENG TEPUNG KRIBO. CRISPY TAHAN 10 JAM, COCOK UNTUK JUALAN

Kali ini saya nyoba copycat resep Ayam KFC-nya. Tapi dengan modifan sana sini yak, beberapa ditambahkan seperti kunyit, maksud saya sih biar gak amis yah.

Resep asli KFC konon mengandung bumbu dan rempah sampai 11 jenis. Biar susah ditiru, telur yang digunakan juga sudah dalam bentuk bubuk. Dan karena beberapa bumbu juga sulit didapatkan di sini saya cuma pake 7 jenis aja tapi hasilnya sudah enak nampol. Sudah mirip 11-12 lah ya.

Dan yang pasti dengan teknik pengolahan seperti ini, jadinya malah lebih kribo dan tahan lama crispynya… Bisa sampai 10 jam lho! Nah itu yang bikin istimewa, makanya jadi susah move on dari resep ini.. Cocok buat usaha rumahan bunda..

Monggo dicoba resepnya dimari:

Bahan A

800-1000 gr ayam bagian paha atau dada, potong sesuai selera

1 butir telor, tambahkan sejumput garam, kocok lepas

250 ml Air es

1 sdt Baking soda

Bahan B [Bumbu halus]

10 siung bawang putih

1 sdt merica bubuk atau butiran

1 ruas jahe

2 blok kaldu ayam

1 sdt garam

1/2 sdt ketumbar[opsional]

3 buah cabe merah [opsional]

1 ruas kunyit [opsional]

Bahan C [Untuk pelapis]

450 gram terigu Cakra [Protein Tinggi]

150 gram maizena

2 sdt bubuk paprika atau bisa juga bubuk cabe merah. Bisa dilewatkan kalau gak suka pedas

Kaldu bubuk [kaldu blok] secukupnya atau garam, pastikan asinnya pas

1 sdt bubuk basil [opsional]

1 sdt bubuk oregano [opsional]

1 sdt bubuk lada [opsional]

Cara Membuat:

Aduk bahan C hingga tercampur rata, sisihkan.

Cuci bersih ayam, kemudian campur dengan Bahan B yang sudah dihaluskan, masukkan ke kulkas semalaman agar bumbu meresap. Kalau mau lebih singkat bisa cukup 3-5 jam saja. Tapi rasanya tentu tidak semaksimal yang dimarinade semalaman yah.

Siapkan buat bahan celupan : caranya air es di bahan A kita campur dengan 5 sdm campuran dari bahan C. Tambahkan juga soda kue dari bahan A. Sisihkan atau simpan di kulkas dulu agar tetap dingin sehingga lebih menempel maksimal.

Keluarkan ayam dari kulkas, tambahkan kocokan telor di bahan A, aduk rata. Kemudian balurkan Ayam pada tepung pelapis [Bahan C tadi], lalu kibas-kibas ayam, celup sebentar dalam air es, balurkan lagi dalam tepung pelapis sambil dicubit-cubit agar tepung menempel dan jadi kribo nantinya, lakukan hingga habis..

Note: agar hasil renyah, waktu penepungan ke bahan pelapis usahakan tepat diwaktu sesaat mau masuk ke penggorengan berikutnya, baru proses remas atau dicubit-cubit. Dengan begitu ayam tepungnya tidak terlalu lama menunggu. Karena jika terlalu lama didiamkan hasilnya bisa jadi keras nantinya.

Goreng ayam dengan minyak banyak, goreng hingga matang kuning kecoklatan, jangan sering dibolak balik agar tidak menyerap minyak.

Angkat tiriskan, dan sajikan. Garnish dengan oregano dan dicocol dengan saus sambal. Maknyuss

Tekstur daging ayam di dalamnya bisa matang sempurna, asal waktu menggorengnya menggunakan teknik deep fry [banyak minyak] dan pake api sedang cenderung kecil.

Tepung disarankan yang protein tinggi yah. Karena dari puluhan kali bikin ayam tepung, yang paling awet crispy-nya ya pake tepung Pro-ting. Tidak masalah emang kalau mau pake pro sedang atau rendah. Bedanya paling warna lebih putih ya.. Ini sample saya pake pro sedang. Hasilnya sama-sama kriuk. Cuma gak sampe 5 jam juga, teksturnya sudah berkurang ya kriuknya. Begitu juga saat saya trial pake terigu pro rendah. Hasilnya renyah, crunchy dan putih walau sudah matang juga, tapi kriuknya gak tahan lama.
